Peppermint Bark

MMMMM peppermint bark!

I’ve been making this Peppermint Bark for over 20 years. With just three ingredients, it’s a cinch to make and a guaranteed crowd-pleaser. I make Holiday Candy baskets for my husband’s clients and this Peppermint Bark is one of the first candies I made.  It’s fancy but so simple 

Tools

  • Parchment Paper
  • Half-Sheet Pan
  • Spatula

Ingredients 

  • 1 cup Crushed Candy Canes – ½ cup mixed with melted white chocolate and ½ cup sprinkled on top (approximately a dozen medium candy canes)
  • 2 ½ teaspoons McCormick Pure Peppermint Extract– to taste depending on your Peppermint Palate!
  • 2- 12-ounce bags of Wilton white candy melts (or the candy melt brand you prefer)

Prep

Pulverize Candy Canes in a food processor- (We use a KitchenAid food processor, we have friends that have a Cuisinart) 

Melt chocolate – over low heat on the stove, or in the microwave on low power. Check and stir every 30 seconds until melted

Recipe Directions

Stir ½ cup pulverized peppermint candy and peppermint extract into melted candy, mix well (by hand)

Spread thinly and evenly into a Half-Sheet tray approx. 21 x 15

Chill until firm-  (in Michigan winters it takes about 10-20 minutes outside   

You may also chill in your refrigerator for about 30 minutes. 

 

Delish Tip 1- The thinner you spread the mixture, the more bark you can make. Plus no one wants to break a tooth!

 

Delish Tip 2: To make Peppermint Bark as gifts, use your choice of small treat bags and/or ribbons for an easy, festive, and delish present for teachers, the mailman or lady, and hostess gifts. 

 

Delish Tip 3: Pulverize extra candy canes to flavor hot chocolate, put on vanilla ice cream, or use on holiday cookies. 

Break into pieces and enjoy!
