Pineapple Upside Down Pancakes

IMG_0910Oh my! I had these pancakes at a local diner by my house and I was obsessed as to how they made them. I figured out through trial and error. The brown sugar caramelizes  on the griddle and when you flip the pancake back over and it cools for a few seconds the surface gets sweet and crunchy; It is SO GOOD!! I like whipped cream on mine but you might like syrup with yours. I have a pancake mix I make from scratch but I also use a mix sometimes.

Ingredients:

For 4-8 Pancakes you’ll need

1 Cup of Pancake Mix—Mine called for the addition of:

1 egg

2/3 cup of milk

2 TBSP oil –plus extra for the pan

1 cup of fresh diced pineapple

1/2 cup of light brown sugar

Recipe:

Heat your pan or griddle on Medium heat. Put about 2 tsp of oil in your pan or griddle. Pour a 1/4 – 1/2 cup of batter in the pan. When you see bubbles around edges put on the pineapple-about a TBSP. Wait until the pancake is 80% cooked (the edges of your pancake look dry) and there are a lot of bubbles all over the pancake.  sprinkle brown sugar on the cake and flip.  Wait 30-45 seconds and flip the pancake onto a plate brown sugar side up. As the pancake cools a minute the sugary top with get crunchy like a creme brûlée!! DELISH!!
