We eat this salad almost everyday in the summer. It’s crunchy, juicy, and refreshing. Look for organic tomatoes that are tasty if tomatoes aren’t in season where you live.
- 1 lb of Organic cherry tomatoes
- 1 English cucumber
- 1/2 cup of feta cheese
- 1/4 cup of white onion
- 1/4 cup of fresh basil leaves
- 3 TBSP of italian dressing
This salad is so simple but its delish!! Slice tomatoes in half or quarters depending how large they are. Chop cucumber and dice onion. Chiffonade the basil or tear it by hand. Crumble in the feta and add dressing. Toss to combine. Let the flavors blend in the fridge for at least 1/2 hour.
